Easy Chicken Parmesan

We all have those family favourite recipes, that are always in rotation and that everyone gets excited about, when they yell, “what’s for dinner?”  In our house, one of those recipes is Chicken Parmesan. It takes no time to throw together and the combination of chicken and pasta is perfect for weeknight dinners, before sports practices or games, or a nice Sunday supper on the weekend.

I recently cleaned and organized my pantry. Like…took EVERYTHING out….got rid of all the expired items and things I knew we just weren’t going to use. I gave the shelves a good cleaning and then was on a mission to give my pantry a bit of a makeover.

I started by storing a lot of items like pasta, rice, and my baking products in jars. This makes it looks cleaner and allows us to easily see what we have. I love the minimal look of it and it honestly makes me feel so much calmer, when I open it up.

The ingredients in this Chicken Parmesan recipe are things I generally have on hand and in my pantry.  I pick up up chicken breasts when they are on sale and paired with a nice green salad, dinner is ready!

Chicken Parmesan

Quick and easy meal to assemble
Prep Time 10 minutes
Cook Time 55 minutes

Ingredients
  

  • 5 boneless, skinless chicken breasts
  • 1/4 cup parmesan cheese
  • 1 can pasta sauce 680 ml no name Simple Check Pasta Sauce
  • 3/4 lb pasta no name Simple Check Penne or Spaghetti
  • 1 tsp olive oil extra-virgin
  • 1 tsp oregano
  • 1 1/2 cup mozzarella cheese shredded
  • 4 tbsp parmesan cheese

Instructions
 

  • Preheat oven to 375 F.
    Place chicken breasts in a 9x13 glass pan. Sprinkle with 1/4 cup of parmesan cheese. Pour pasta sauce evenly over top.
  • Cover dish with aluminum foil and place in preheated oven. Set the timer for 35 minutes.
  • When the timer goes, leave chicken in the oven and set the timer again for 20 minutes. Fill a large pot with water and bring to a boil. Add pasta to the boiling water and cook following the package directions.
  • When pasta is cooked, rinse it in a colander and return to pot. Add olive oil and oregano and toss.
  • Remove chicken from oven and sprinkle mozzarella and parmesan cheese over top. Return to oven (without the aluminum foil) and bake for 5 minutes or until the cheese is melted.
  • Serve chicken on on top of pasta or on the side.

I like to use no name Simple Check products when I make Chicken Parmesan, as I know I’m getting quality ingredients for a lot less. Their pasta and sauces are a staple in my pantry. With their easy to spot labels and my glass jars, it makes planning our weekly menu, so simple and efficient.
