Crockpot Tomato Tortellini Soup

A hearty soup for a warm-your-belly winter supper

Ingredients
  

  • 3-4

    mild Italian sausages, cut in piece and fried

  • 2 tbsp olive oil
  • 2 large cloves of garlic, minced
  • 2 cans condensed tomato soup
  • 1 small can crushed tomatoes
  • 1/2 cup chopped sun-dried tomatoes
  • 1 1/2 cups milk
  • 2 cups Blend (10% cream)
  • 2 cups chicken stock
  • 1 tsp onion powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tsp Italian Seasoning
  • 1 pkg cheese filled tortellini
  • 1/2 cup shredded parmesan cheese
  • croutons

Method
 

  1. In a frying pan, add 2 tbsp. of olive oil and heat.  Sauté sausage pieces until browned, then add minced garlic.  Add the contents of the frying pan to your crockpot.  
  2. To the crockpot, also add tomato soup, crushed tomatoes, sundried tomatoes, milk, blend, chicken stock, onion powder, salt, pepper, and Italian seasonings.   DO NOT ADD TORTELLINI until the last fifteen minutes before serving, as they will swell.  
  3. Turn crockpot on low and allow to cook for 4-5 hours.  Stir occasionally. 
  4. Ten or fifteen minutes before serving, add fresh tortellini.  
  5. Portion into soup bowls, then add 4-5 croutons, and sprinkle with shredded Parmesan.  Serve with crusty bread.
