Crockpot Tomato Tortellini Soup

Brrrrr, we have been having quite the stretch of chilly weather. It is the perfect weather for this simple Crockpot Tomato Tortellini Soup guaranteed to warm you up right quick. ❄️

I love to put a big pot of hearty soup on for a warm-your-belly winter meals. This crockpot recipe is a fix and forget meal that is a favourite of ours. It can also be done on the stovetop, but I like how easy the crockpot makes it. I enjoy how the flavours get absorbed while it slow cooks. 

This recipe for Crockpot Tomato Tortellini Soup was one I found on Pinterest, then made it my own by adding Italian sausage to it.  It is a great way to use up your leftover sausages 😉

Crockpot Tomato Tortellini Soup

A hearty soup for a warm-your-belly winter supper

Ingredients
  

  • 3-4

    mild Italian sausages, cut in piece and fried

  • 2 tbsp olive oil
  • 2 large cloves of garlic, minced
  • 2 cans condensed tomato soup
  • 1 small can crushed tomatoes
  • 1/2 cup chopped sun-dried tomatoes
  • 1 1/2 cups milk
  • 2 cups Blend (10% cream)
  • 2 cups chicken stock
  • 1 tsp onion powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tsp Italian Seasoning
  • 1 pkg cheese filled tortellini
  • 1/2 cup shredded parmesan cheese
  • croutons

Instructions
 

  • In a frying pan, add 2 tbsp. of olive oil and heat.  Sauté sausage pieces until browned, then add minced garlic.  Add the contents of the frying pan to your crockpot.  
  • To the crockpot, also add tomato soup, crushed tomatoes, sundried tomatoes, milk, blend, chicken stock, onion powder, salt, pepper, and Italian seasonings.   DO NOT ADD TORTELLINI until the last fifteen minutes before serving, as they will swell.  
  • Turn crockpot on low and allow to cook for 4-5 hours.  Stir occasionally. 
  • Ten or fifteen minutes before serving, add fresh tortellini.  
  • Portion into soup bowls, then add 4-5 croutons, and sprinkle with shredded Parmesan.  Serve with crusty bread.

This soup is also easy to heat up if you happen to have any leftovers. Reheat on the stove top, when warmed through ladle into oven proof bowls. Top with croutons and shredded parmesan, and pop under the broiler for a few minutes until cheese is melted and serve. Yum!
