One of the easiest ways to infuse flavour in recipes is with the addition of fresh herbs. Planting and growing your own herbs is such a great way to have the ones you use regularly, ready to cut fresh when working and preparing in the kitchen. Roasted Potatoes with Fresh Rosemary

If you are a gardener, growing your own food and then seasoning it with fresh herbs from your garden, is just so satisfying.  It elevates even simple foods to another level. Roasted potatoes with fresh rosemary, could come straight from your garden…or a trip to the farm market...and produces such a delicious flavourful dish. 

Roasted Potatoes with Fresh Rosemary

Serves: 6-8
 
A delicious and simple way to serve potatoes using fresh herbs
Ingredients
  • 2 pounds of potatoes scrubbed with skin left on.
  • ⅛ cup olive oil
  • salt and pepper to taste
  • 2-3 cloves of garlic, chopped
  • 2 tbsp. minced fresh rosemary
Instructions
  1. Preheat the oven to 400 degrees
  2. Cut the potatoes into uniformly sized chunks
  3. Toss with the oil, salt, pepper, garlic and rosemary until the potatoes are evenly coated
  4. Roast for approximately an hour
  5. Turn several times
  6. The potatoes should be tender and have some browning on the edges
  7. Drain if necessary, season and serve immediately
