Plant to Plate- Roasted Potatoes with Fresh Rosemary

- 2 pounds of potatoes scrubbed with skin left on.
- ⅛ cup olive oil
- salt and pepper to taste
- 2-3 cloves of garlic, chopped
- 2 tbsp. minced fresh rosemary
- Preheat the oven to 400 degrees
- Cut the potatoes into uniformly sized chunks
- Toss with the oil, salt, pepper, garlic and rosemary until the potatoes are evenly coated
- Roast for approximately an hour
- Turn several times
- The potatoes should be tender and have some browning on the edges
- Drain if necessary, season and serve immediately
