Fiddlehead and Potato Hash

OK…I’m going to be honest…before last week I had never cooked fiddleheads, in fact I don’t think I had ever even tried them! What?! For someone who likes to eat seasonally, fiddleheads just seemed like some sort of unknown, what the heck do I do with it…vegetable…until now. 😉 This is Fiddlehead and Potato Hash!

Our East Coast Mom Media group recently put out the challenge for some of us to do a post featuring fiddleheads. I was actually excited when I saw we were doing a blog hop, because I knew this would spur me on to finally learn how to cook fiddleheads, and more importantly what they tasted like…LOL!

When I am in doubt about an ingredient or a recipe, I go straight to the Queen…Martha Stewart. I love Martha…even after her troubles…she will always be the Queen to me. In fact, like most things, she’s gotten even better with age. So this recipe is adapted from one of hers…because like all things Martha…it’s a good thing.

Fiddlehead and Potato Hash

Delicious on its own or as a side dish.
Ingredients
  • 1½ lbs small potatoes, halved
  • ½ lb fiddleheads, cleaned and trimmed
  • 2 tbsp olive oil
  • 1 onion, chopped
  • sea salt and fresh ground pepper
Instructions
  1. In a medium sized pot bring potatoes to a boil and cook until knife tender (don't overcook)
  2. Add fiddleheads and cook for 1 minute or until bright green
  3. Drain and set aside
  4. Heat oil in a medium size skillet and cook the chopped onion for about 2 minutes
  5. Add potatoes and fiddleheads and cook, stirring, until golden brown, about 4 minutes
  6. Season with salt and pepper

 

This honestly couldn’t have been easier. You just add the fiddleheads right to the pot of boiled potatoes…

After answering every one of the kids…and my husband’s…”what is this?” question, everyone ate it up and enjoyed their first taste of fiddleheads. To me it tasted similar to asparagus, and I’ve read it’s often compared to a cross between asparagus and green beans…yum…no wonder they were good!

So simple, yet so delicious! I’m planning on making it again this week! Fiddlehead season is short, so now that I know what to do with them, I plan on enjoying them again before they are gone!
