Fiddlehead and Potato Hash

Serves: 4
- 1½ lbs small potatoes, halved
- ½ lb fiddleheads, cleaned and trimmed
- 2 tbsp olive oil
- 1 onion, chopped
- sea salt and fresh ground pepper
- In a medium sized pot bring potatoes to a boil and cook until knife tender (don't overcook)
- Add fiddleheads and cook for 1 minute or until bright green
- Drain and set aside
- Heat oil in a medium size skillet and cook the chopped onion for about 2 minutes
- Add potatoes and fiddleheads and cook, stirring, until golden brown, about 4 minutes
- Season with salt and pepper
