Fiddlehead and Potato Hash

Delicious on its own or as a side dish.
Ingredients
  • 1½ lbs small potatoes, halved
  • ½ lb fiddleheads, cleaned and trimmed
  • 2 tbsp olive oil
  • 1 onion, chopped
  • sea salt and fresh ground pepper
Instructions
  1. In a medium sized pot bring potatoes to a boil and cook until knife tender (don't overcook)
  2. Add fiddleheads and cook for 1 minute or until bright green
  3. Drain and set aside
  4. Heat oil in a medium size skillet and cook the chopped onion for about 2 minutes
  5. Add potatoes and fiddleheads and cook, stirring, until golden brown, about 4 minutes
  6. Season with salt and pepper
