Brown Sugar Apple Muffins

Some of my most treasured childhood memories happened in the kitchen, baking with my Gram.  She taught me to love creating (and then enjoying) tasty, beautiful dishes.   She was never too impatient to make us our own little pie crust or show us how to properly crimp edges or peel apples.  I still to this day make Gram’s Apple Pie. Today though,  I want to introduce you to Brown Sugar Apple Muffins.

So this month, I decided to make a fun back-to-school muffin recipe that features my little friend Maggie Bird, who is my little helper in the kitchen, and has been joining me after school.  It’s been so much fun, and I would encourage everyone to share their kitchen with children.   

Brown Sugar Apple Muffins

Maggie just started Primary, and has been keen to help me bake. We picked up some apples at Wiles Lake Farm Market after school and headed to the kitchen. What are your favourite baking apples? You can use anything form Granny Smith, to Jonagold to our personal favourite Honey Crisp. What I love about this recipe is that it features one of Nova Scotia’s favourite fruits! We hope you enjoy these Brown Sugar Apple Muffins.

Brown Sugar Apple Muffins

Ingredients
  

  • 1 1/2 cups brown sugar
  • 1/3 cup canola oil
  • 1 egg
  • 1 cup buttermilk
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1 tsp vanilla
  • 2 1/2 cups flour
  • 2 1/2 cups chopped apple

Topping

  • 3/4 cup sugar
  • 1 tsp cinnamon
  • 3 tbsp melted butter

Instructions
 

  • Preheat oven to 350 F.  Grease muffin cups or line with cupcake papers.
  • In mixing bowl, mix together (whisk) brown sugar, egg, oil, and buttermilk.  Stir in baking soda and cinnamon.  Add flour and apples and mix.  
  • Spoon muffin batter into muffin cups (3/4 full for smaller muffins, to run for larger).  
  • In a small bowl melt butter and add sugar and cinnamon.   Stir with fork.  Spread on top of each muffin and lightly pat with edge of a fork so that the crumbs stick to the muffin.  
  • Bake at 350 for 25-30 minutes or until muffin springs back to touch and toothpick inserted in center is clean.
  • Remove to cooling rack to cool.  Let stand five minutes and carefully remove muffins from pan.
  • Enjoy!!!
