August and September are such a gift when it comes to seasonal produce. It seems like everything begins to ripen, is in season and our options are endless.  Eating and cooking seasonally is one of the best ways to get back in touch with our food and the people who grow and sell their products. If you only eat strawberries or blueberries or carrots or green beans, from the grocery store…you are missing out. We are fortunate to live in a time of abundance where we have the option to have these items all year round, but there is NOTHING like the taste of a freshly picked piece of fruit or vegetable. Trust me. 😉

One of those summer seasonal delights is blueberries. Did you know that blueberries are the largest fruit crop in Nova Scotia and employ thousands seasonally and year round? Nova Scotia  produces over 40 million pounds of wild blueberries each year. That’s impressive!

Blueberry Apple Crisp

While blueberries are in season, it’s easy to find ways to use them in your kitchen. Smoothies, on top of yogurt, cakes, breads, fruit sauce, and of course a nice fruit crisp. Fresh…or frozen blueberries, combined with apples and a crisp topping and you’ve got a delicious, seasonal dessert…or breakfast. 😉

Blueberry Apple Crisp

Serves: 4-6
 
Ingredients
  • 4 cups of fresh or frozen blueberries
  • 4 cups peeled and chopped apples
  • 2 Tablespoons cornstarch
  • ½ cup brown sugar
  • 1 Tablespoon lemon juice
  • Crisp Topping
  • 1 ½ cup quick cooking rolled oats
  • ⅓ cup brown sugar
  • ⅓ cup flour
  • ¼ cup pecan pieces (optional)
  • ⅓ cup butter, melted
  • ½ t cinnamon
Instructions
  1. Preheat the oven to 350 degrees.
  2. Toss the fruit together with the brown sugar, cornstarch and lemon juice.
  3. Place in a 9 inch square baking pan.
  4. For the topping, mix the dry ingredients together and add melted butter until just moistened. Sprinkle on top of the fruit mixture. Bake for 1 hour or until the fruit filling has bubbled up and crisp is golden brown.
  5. Serve warm with whipped cream or vanilla ice cream.

    My favourite way to eat blueberries is in a spinach salad, toss spinach, blueberries, feta cheese and walnut pieces with a light poppyseed or any light dressing…it looks delish and tastes AMAZING. I saw this at a market, I bought it for lunch that day and have been making it ever since. I’m def going to make your crisp recipe!

    I’m def going to try your recipe looks delish. My new fav way to enjoy blueberries is in a spinach salad, spinach, sprinkled with feta, sprinkled with walnut pieces , lots of blueberries and a light dressing, I used poppyseed…this salad is amazing…I mean, feta, blueberries and walnuts….what’s not to love. I eyed this made up at a market, bought it and have been making it ever since…you should try that along with your crisp for a perfect lunch!
