grated zucchini with peel, packed

Instructions
Whisk eggs together in a medium sized bowl
Add next 5 ingredients
Stir together well
Add flour, baking powder and salt and stir until mixed
Fill greased muffin tins until almost full
Bake at 350 for 30 minutes
Let stand for 5 minutes before removing
Remove from pan and let cool on a wire rack

Can be frozen.
