You know how sometimes in the afternoon, you start to feel hungry…you just need a little…something. Or when the kids come home from school STARVING, looking to gobble up anything in sight. You want a snack that has some protein and will keep you going until suppertime and maybe something just a little bit sweet too. I have just the thing...No Bake Monster Cookie Energy Balls!

No Bake Monster Cookie Energy Balls

These are dangerously good! It’s really like eating cookie dough…without the worry of eating raw eggs….LOL! They remind me a lot of our favorite M&M’s cookie. The combination of peanut butter, oats and honey…with chocolate and M&M’s sprinkled in, make this sure to be a family favorite.

No Bake Monster Cookie Energy Balls

Simple to make and delicious for a snack or dessert
Ingredients
  • 1 cup dry oats (I used ½ large flake oats and ½ quick cooking)
  • ¼ cup peanut butter
  • ¼ cup honey
  • ¼ cup mini M&M’s
  • ¼ cup regular or mini chocolate chips
  • dash of salt
  • ½ teaspoon vanilla
Instructions
  1. In a medium sized bowl, add all the ingredients and mix well
  2. The mixture will be sticky
  3. Refrigerate for at least 30 minutes
  4. Scoop about 1 tbsp into your hand and roll into a ball (If the mixture feels too dry, add an extra tablespoon or two of peanut butter or honey)
  5. Store the balls in a covered container in the fridge for up to one week or in the freezer for 3 months

 

So many options and possibilities when it comes to energy balls! Now that I know how much my family loves them, I really want to try some other combinations. Next on my list is to give East Coast Mommy’s No Bake Energy Balls (with ancient grains & super seeds) a try. Yum!

These are also a great recipe for kids to try. Grace…who’s 14…has made them a couple of times and it takes ingredients that we generally have on hand. I bought the M&M mini baking bits specific for these energy balls, but you can easily make these without the M&M’s if you don’t have any or would prefer to leave them out.

What a perfect after school snack, or to pack up for road trips, sporting events, hiking excursions, some forced family fun, etc. The combination of peanut butter and chocolate is hard to resist. Seriously…try to eat just one. 😉
