No Bake Monster Cookie Energy Balls

- 1 cup dry oats (I used ½ large flake oats and ½ quick cooking)
- ¼ cup peanut butter
- ¼ cup honey
- ¼ cup mini M&M’s
- ¼ cup regular or mini chocolate chips
- dash of salt
- ½ teaspoon vanilla
- In a medium sized bowl, add all the ingredients and mix well
- The mixture will be sticky
- Refrigerate for at least 30 minutes
- Scoop about 1 tbsp into your hand and roll into a ball (If the mixture feels too dry, add an extra tablespoon or two of peanut butter or honey)
- Store the balls in a covered container in the fridge for up to one week or in the freezer for 3 months
