Meal Plan Monday

I don’t know about you…but I’m finding January going quite quickly! When you have kids sporting events in the calendar, it does really makes the weeks fly by. Right now we are deep into my daughter’s basketball season…which included a tournament in Truro this weekend..and my sons Junior B Hockey team…which involve games every weekend. There’s more games and practices this week….thanks to my meal plan…I’m feeling ready!

Athletes need proper nutrition and some hearty meals to nourish them before and after games, so getting back to Meal Planning this month, is necessary and is just such a relief for me. I shopped last Thursday before I went away for my daughters tournament and now I just feel giddy knowing that I don’t have to think about what we’re eating this week.

This weeks meal plan comes from The Atlantic Superstore (not sponsored) where I took advantage of one of their 4 day deals and bought a turkey.  Another perk to signing up for the newsletter and getting a sneak peek of what’s coming up…is that some of the big sales …like turkey for $0.99/lb…are JUST on till Sunday! Even though the holidays were only 3 weeks away…I was ready for turkey again…yum!

I like to stock up on pantry items when they are on a good sale, so some of the other ingredients for this weeks meals….like diced tomatoes, beans, pasta, pizza sauce, etc…I already have. Vicki is also back next Saturday with a Turkey Soup recipe in the slow cooker…so I’m looking forward to trying that out with some of my leftover turkey. 🙂

  1. Great post, Jennifer! We don’t have kids, but we do have a business, dogs, chickens, and lots of weekly appointments. I like cooking a “beer can barbecue” chicken about once a month. We get chickens from neighbours who raise them every year. They are delicious! I always take the leftover meat off the bone after dinner and make stock right away. If I don’t, it might get away from me. Sometimes we will eat the hot chicken for dinner and chicken sandwiches the next day. We make a delicious artichoke, cheese, spinach, chicken casserole with the extra meat. Lots of protein! I also like to make a whack of brown rice in my Instant pot and have it for breakfasts and quick suppers. I have celiac disease, so gluten free foods and recipes are essential. Shrimp with lime, garlic, and chilies cooked on the bbq is a great dish to go with the rice and some stir fried veggies. Now I’m hungry!

  2. You are the second person making pot pie that I have come across so far. I guess I should have put this on my menu like I had originally planned! Mini Muffin Pizzas sound perfect too! It all does. Great Menu!

    I have a question about the recipe for the turkey pot pie which looks great. It calls for heavy cream. Would that be whipping cream?
