Strawberry Rhubarb Pie-Tastes like Summer

One of my favourite early summer treats is strawberry rhubarb pie with vanilla ice cream.  At this time of year, you can find tender, fresh rhubarb, which (in my opinion) makes the best pies.   However, out of season, it can be done with frozen rhubarb, as long as you adjust the amount of thickening agent, as frozen will be juicier. And this time, I tried a homemade pie crust from Pinterest’s Sally’s Baking Addiction.   It was to die for!!  Flaky, buttery perfection, easy to roll out, and it makes the perfect amount for two crusts.  But you can also use bought crusts, especially Pillsbury, which rolls out nicely. 

Strawberry Rhubarb Pie

Ingredients:

2 pie crusts (bottom and top)
2 1/2 cups fresh rhubarb, washed and chopped small
2 cups sliced strawberries (hulled)
1 1/2 cups sugar
1 tbsp. lemon juice
2 tbsp. Cornstarch (or you can substitute 1 tbsp. Cornstarch and 1 tbsp. Tapioca
1 tbsp. lemon juice/zest
2 tbsp. butter

Instructions: 

1. Prepare fruit, washing and slicing/chopping.   

2. Mix the strawberries, rhubarb, and sugar together.

3. Add the lemon juice and zest.

4. Stir in the cornstarch and mix thoroughly. 

5. Roll out bottom crust and put in the pie plate, trimming the edges so it just hangs over the plate edge slightly.  Place all filling in the pie plate, mounding it in the center.

6. Dot filling with small pieces of butter.  Then add top crust.   Trim it around the edges and press to seal with the bottom crust.  Flute the edges. 

7. Brush with egg/milk wash (I used one beaten egg and 1 tbsp. Milk.  Sprinkle with cinnamon/sugar mixture or coarse sugar.

8. Put a piece of tin foil on your lower oven rack so any dripping juice doesn’t burn onto your oven.  Put the pie on the upper rack.  Bake at 350 for 50-60 minutes or until crust is golden and filling is nicely bubbling. 

9. BE SURE TO COOL COMPLETELY.  Then let stand for about 4 hours before cutting.  It’s tempting to cut into when it’s warm, but your pie will be runny if you don’t allow it to set properly.  Then chill it.
