Strawberry Bread Recipe

Summer time is here and the fruits of the season are arriving! If you try to eat seasonally, then you know that some things are eagerly anticipated…like the arrival of fresh strawberries. Do you go strawberry picking? If you do go and end up wondering what to do with some of your berries, a little Strawberry Bread is always a nice treat.

This recipe makes 2 loaves and uses about a quart of berries. I’ve already made Strawberry Bread twice this summer and have always gifted the 2nd loaf. This also freezes well, so next time you’re taking a summer road trip, throw this in your cooler bag with some cheese and fruit, and you’re good to go! Summer and strawberries…they just go together. 🙂

Strawberry Bread Recipe

Serves: 2 loaves
 
Ingredients
  • 3 cups all purpose flour
  • 1 tsp. baking soda
  • 1 tsp salt
  • 2 tsp cinnamon
  • 2 tsp vanilla
  • 2 cups sugar
  • 4 eggs beaten
  • 1 cup canola oil
  • 2½ cups sliced strawberries
Instructions
  1. Mix all ingredients, except for the strawberries, using a hand mixer
  2. Add berries and fold into batter
  3. Spray 2 large loaf pans with non-stick cooking spray
  4. Pour batter into pans and bake at 350 for 60 min
  5. Let cool for 10 minutes before removing from pans

I love going strawberry picking and coming home with a flat of berries to eat and use. I often make jam, strawberry shortcake and of course we just love eating them fresh. If you don’t have time to go picking, you can often pick them up at our local markets, like Wile’s Lake Farm Market or some of the weekly farmers markets. Strawberry season doesn’t last all that long, so be sure to enjoy it while it’s here.
