Meal Plan Monday

Oh March…you with your spring like days one minute and snow falling the next…..what’s a girl to do? Make a pot of soup and start planning seed plantings, that’s what! 😉 March can certainly bring a mixed bag of weather and it also seems to bring in me a bit of kitchen/cooking burnout…that’s where my meal plan kicks in. Welcome to Meal Plan Monday.

It was last March when I felt just sick and tired of cooking every single day and did a freezer meal cook, giving myself 14 meals to put in the freezer and a wonderful break from daily meal prep. This week I did a bit of a cook day on Saturday, making some food for a potluck we were hosting and also prepping some meals for this week. Sometimes I would just rather spend a few hours prepping and cooking, than tackling it day by day.

Here’s what we’re having:

Chicken and Black Bean Burritos

Sweet and Sour Meatballs

Vegetable Beef and Rice Soup

Haddock, Rice and Green Beans

Slow Cooker Honey Garlic Chicken and Veggies

Here’s what I bought:

Meal Plan

PC Jasmine Rice- $3.99

No Name Black Beans (4/$4.00)- $1.00

PC White Corn and Black Bean Salsa- $2.88

No Name Marble Cheese- $3.99

No Name Mozzarella- $3.99

Primo Pasta Sauce- $1.29

PC Red Mini Potatoes- $2.99

3-pack Sweet Peppers- $2.49

English Cucumbers- $0.99

PC Frozen Green Beans- $3.49

PC Blue Menu Tortillas- $2.99

Lean Ground Beef- ($3.99/lb) $11.51

(2) Boneless, Skinless Chicken Breasts($3.44/lb) – $15.61

Frozen Haddock Fillets- ($4.44/lb) $6.57

Total- $63.78

I also bought extra ingredients to make a double of batch of burritos, so I can put one in the freezer and the Vegetable Beef and Rice Soup makes a really big batch, so some of that will go in the freezer as well. It doesn’t take double the amount of time to make 2 batches of a recipe, so whenever possible…with a little planning…this is a great way to eliminate the need to cook every day.
