Sausage Skillet Meal with Charred Bread

- Sweet (Mild or Hot) Italian Sausages - 5 links for 2 people, 10 for 4 or more
- Extra Virgin Olive Oil
- 1 bulb fennel (optional) cored and sliced
- 2 sweet red peppers sliced
- 2 onions peeled and chopped
- Hot peppers or green are optional
- 4 cloves of garlic (grated)
- salt & pepper
- Pinch of red pepper flakes
- 1 tsp. dried oregano
- 2 tbsp. white wine
- Fresh basil - 4 leaves, torn
- 2-4 eggs
- pat of butter (for frying eggs)
- Ingredients - Charred Bread
- Ciabatta/Artisan style loaf
- 3-4 tbsp. melted butter
- 1 tsp. crushed garlic
- Drizzle of Extra Virgin Olive Oil
- Sea Salt
- ½ cup shredded Parmesan
- Gather all ingredients.
- Begin by peeling and slicing the onions, peppers, and fennel.
- Peel garlic bulbs and tear your basil leaves.
- Assemble this all on a cutting board or work surface.
- Next prepare your bread by slicing into top and bottom halves.
- Melt butter in the microwave and mix with crushed garlic.
- Brush it over the two halves of the bread with a pastry brush and put on a cookie sheet.
- Set aside for later.
- Next, begin cooking the sausage.
- In a cast iron skillet add a splash of olive oil.
- Place sausage in hot skillet, and poke with a fork.
- When you hear it begin to sizzle, add about ½ inch of water to the pan.
- Turn the sausages periodically- adding the water will cook the sausages evenly without burning them.
- Add more water if needed until sausages are cooked uniformly throughout, and then allow the water to evaporate and the casings to crisp up.
- Remove the cooked, crisped sausages from the pan to a cutting board.
- At this point, turn on your broiler oven as you will soon be charring the bread.
- In the same skillet as the sausage (do not clean) add a bit more olive oil.
- Put sliced onions, peppers and fennel into the pan.
- Cook to tender crisp (about 6 minutes).
- Add grated garlic, reduce heat, and add red pepper flakes, oregano, and white wine- Bring to a bubble.
- Slice sausages on the bias and add slices back into the skillet.
- Toss in fresh basil.
- Put the bread into the hot oven, and while it is crisping (won't take long so watch it carefully), fry your eggs low and slow in butter.
- Low heat is best so your eggs do not get brown lace.
- Cook them over easy so the yolk is still runny.
- Remove crispy bread from the oven and drizzle with the olive oil, sprinkle with a bit of sea salt, and shredded Parmesan.
- Slice or rip the bread into pieces.
- Serve alongside the skillet or on a bread board.
- Eggs go on top of the skillet and your meal is served right from the skillet.
