Fresh Corn Chowder - Plant to Plate

Serves: 6-8
- 4 Cobs of fresh sweet corn, husked and cleaned
- Stock
- 1 bayleaf
- 5 fresh thyme stems
- 1 t whole black peppercorns
- 1 clove garlic
- Chowder
- 1 carrot, diced
- 1 large onion, diced
- 2 stalk celery, diced
- 3 Tablespoons butter
- 2 Tablespoons flour
- 4 large potatoes, peeled and diced
- 2 cups milk
- ¼ cup cream
- salt and pepper to taste
- Cut corn off of the cobs and set aside
- Break the cobs in half, place them in a soup pot and cover with cold water
- Add bay leaf, thyme, peppercorns and garlic
- Bring to the boil and simmer for 45 minutes
- Strain, reserving the liquid
- While the stock is cooking dice all the vegetables
- In a heavy bottomed soup pot melt the butter and sauté the carrot, celery and onion gently on medium heat
- Add the flour then whisk in 6 cups of the corn stock until it starts to simmer
- Add the potatoes, milk and salt and pepper
- Simmer until the vegetables are tender
- Add the cream and reserved corn kernels
- Simmer for 5 minutes and adjust seasoning
- Garnish ideas: bacon bits, green onions or chives
