Fresh Corn Chowder - Plant to Plate

Delicious soup made with broth from the corn cobs!
Ingredients
  • 4 Cobs of fresh sweet corn, husked and cleaned
  • Stock
  • 1 bayleaf
  • 5 fresh thyme stems
  • 1 t whole black peppercorns
  • 1 clove garlic
  • Chowder
  • 1 carrot, diced
  • 1 large onion, diced
  • 2 stalk celery, diced
  • 3 Tablespoons butter
  • 2 Tablespoons flour
  • 4 large potatoes, peeled and diced
  • 2 cups milk
  • ¼ cup cream
  • salt and pepper to taste
Instructions
  1. Cut corn off of the cobs and set aside
  2. Break the cobs in half, place them in a soup pot and cover with cold water
  3. Add bay leaf, thyme, peppercorns and garlic
  4. Bring to the boil and simmer for 45 minutes
  5. Strain, reserving the liquid
  6. While the stock is cooking dice all the vegetables
  7. In a heavy bottomed soup pot melt the butter and sauté the carrot, celery and onion gently on medium heat
  8. Add the flour then whisk in 6 cups of the corn stock until it starts to simmer
  9. Add the potatoes, milk and salt and pepper
  10. Simmer until the vegetables are tender
  11. Add the cream and reserved corn kernels
  12. Simmer for 5 minutes and adjust seasoning
  13. Garnish ideas: bacon bits, green onions or chives
