Pasta with Prosciutto and Peas in Parmesan Cream Sauce

Ingredients
  • Small onion diced
  • 1 package or 6-8 slices of prosciutto sandwich sliced
  • 2 cups whipping cream
  • 1 cup Asiago shredded
  • ½ cup Parmesan shredded
  • 1 cup frozen peas (or as much as you prefer)
  • Pasta (Farfalle or Rotini)
  • Salt and pepper
  • 2 tbsp olive oil
  • Extra Parmesan for garnish
Instructions
  1. Cut prosciutto into thin strips- you can get it sandwich sliced in the deli or already sliced and prepackaged in your packaged deli meats section- I cut it in half the long way, then cut that into ¼ inch strips
  2. Fry in a nonstick skillet until crispy
  3. Remove from pan and set aside
  4. Add 2 tbsp olive oil to same skillet
  5. In the skillet, toss diced onion in and fry on low for about five minutes- don’t brown it
  6. Add 2 cups of whipping cream and on low heat let this come to a simmer and thicken a bit
  7. At this point turn on your pasta water, bring to a boil, and cook pasta while you are preparing the cream sauce
  8. To the cream sauce, add the cheese (can use all Parmesan but I like the combo of shredded Asiago, which has a nice bite, and Parmesan
  9. Stir to melt.
  10. Once cheese has melted, add the crispy prosciutto pieces, and stir. When the cheese has melted in add the frozen peas to flavour the sauce
  11. Add pepper and salt to taste
  12. Leave sauce to simmer on low until pasta is done
  13. Reserve ¼ cup of the salty, starchy water
  14. Drain pasta and then put it back in pot along with the sauce and the reserved water
  15. Stir to combine all ingredients and work the sauce through all of the pasta
  16. Pour into serving dish and garnish with Parmesan
  17. Serve immediately.
