Crockpot Turkey Soup with Rice

Ingredients
  • Leftover turkey (alternatively can use 2 uncooked boneless skinless chicken breasts)
  • Long grain wild rice (1 cup)
  • 3 carrots peeled and sliced into rounds
  • 1 onion peeled and chopped
  • Celery diced
  • Small turnip peeled and diced
  • 1 carton chicken broth
  • 1 Soupworks (Knorr) vegetable soup seasoning packet.
  • 3-4 cups water
  • Bay leaves (2)
  • Fresh thyme
  • Onion salt
Instructions
  1. Place meat in crock pot- if you don’t have leftover turkey and want to use chicken, just placed uncooked seasoned (with salt and pepper) chicken breasts in crock pot.
  2. Add 1 cup uncooked rice
  3. Add diced (uncooked) onion, celery, and turnip- you may add whatever other vegetables to suit your taste
  4. Next, mix seasoning packet with 3-4 cups of water...I like plenty of broth, so I use 4 cups.
  5. Pour over the meat and veggies
  6. Add the carton of chicken broth and all the seasonings- iIf you like it super flavourful, add a bouillon cube or two as well
  7. Cover crock pot and cook on low for 6-8 hours.
  8. Stir occasionally
  9. At end of cooking time you can shred the meat with a fork, if needed
  10. Serve hot
