Easy Shrimp and Feta Pasta

Serves: 4-6
- ½ 450g box of penne or fettuccine
- 4 garlic cloves, minced
- 1½ onions, chopped
- Olive oil
- 28 oz can of diced tomatoes
- 2 tsp oregano
- ½ tsp black pepper
- 400g bag of uncooked shrimp, peeled
- 1½ cups crumbled feta
- ¼ cup chopped fresh parsley or basil, or 2 tsp dried
- Bring a large saucepan of water to a boil
- Add pasta and cook until al dente, about 8-10 min
- In a large, wide pan, heat about 2 tbsp olive oil over medium heat
- Add garlic and onions and stir until onions begin to soften, about 3 minutes
- Add tomatoes, oregano and pepper and over medium high heat stir often until liquid is reduced by half, about 6-8 minutes
- Add shrimp and continue to cook uncovered until shrimp are pink and firm, about 3-4 minutes
- Remove from heat
- When pasta is cooked, drain well and stir into sauce
- Gently stir in feta and pasta
