Cheesy Chili Soup

Delicious vegetable soup with beans and cheese for added protein.
Ingredients
  • 1 can 20 oz diced tomatoes
  • 1 can 19 oz kidney beans, drained and rinsed
  • 14 oz chicken stock
  • 2 stalk celery, chopped
  • 2 carrots, chopped
  • 1 onion, chopped
  • 2 tsp chili powder
  • 1 Cup shredded marble cheddar cheese, divided
Instructions
  1. Bring all ingredients, except cheese, to a boil in a medium pot
  2. Simmer on low for 25 minutes or until vegetables are tender
  3. Stir in ⅓ Cup of cheese
  4. Ladle into bowls and top with remaining shredded cheese
  5. * You can substitute any type of bean, such as black beans or chickpeas, etc.
  6. * Serve with a dollop of sour cream for something a little extra
