Sausage Pepper Pasta Bake

In last weeks meal plan I bought the ingredients, which were on sale, for Sausage Pepper Pasta Bake. This is a great make ahead meal, which can be then put in the oven at the end of the day, when everyone is tired and hungry. Simple ingredients, a small amount of prep, and a satisfying meal ready for your family.

Sausage Pepper Pasta Bake

Serves: 6-8
 
Make ahead and then bake for 20-30 min at dinnertime.
Ingredients
  • 5 Italian sausage links
  • 3 garlic cloves
  • 2 red, green, or yellow peppers, chopped
  • 2 onions, chopped
  • 1 28 oz can of diced tomatoes
  • ½ 900g bag of penne pasta
  • salt and pepper
  • 1 tsp oregano
  • 1 cup shredded mozzarella
Instructions
  1. Chop sausage links into 1 in pieces
  2. Cook in skillet until browned
  3. Remove from pan and then saute the peppers, onions and garlic
  4. Cook pasta according to directions, slightly under cooking
  5. Combine pasta, sausages, and vegetables in a large deep casserole dish
  6. Mix in a large can of diced tomatoes (with juice)
  7. Add salt, pepper and oregano
  8. Mix in ¾ cup of the shredded mozzarella
  9. Cover with aluminum foil
  10. Bake at 350 for 20 min
  11. Remove aluminum foil, sprinkle with remaining mozzarella and bake for 5 more minutes
  12. Remove from oven and serve

* I bought the club pack of sausages, as they were cheaper than the single pack. I cooked all of them and the 4 pack of peppers. I then split this and put half of the mixture in a freezer bag. Next time I need a quick meal, I will take that out to thaw and all I need to do is prepare some pasta and do a quick toss. Cook once….eat twice. 🙂

    Hi..looks nourishing. And easy…the only ingredient I’d modify is the green peppers (heartburn issues)…. Red peppers are easier on the tummy!
