Slow Cooker Chicken Chili

Ahhhh…January, with your wind chills and weather watches, your dark days and slippery roads…we need something. We need Slow Cooker Chicken Chili.

I have a few different chili recipes I make. Some in my slow cooker, others just on the stove. This is one is nice because it literally takes 10 minutes to throw together, and at the end of the day, a warm bowl of comfort waiting for you.

The day I made this I had two hockey players hitting the road for an away game, I had an evening meeting that I had to leave for at supper time and 3 other people here trying to get to other games and work. Six of us all heading in different directions and at different times. These are the days you need a slow cooker meal in your weekly plan. The hockey players packed theirs to go, and everyone else dipped out a warm bowl of chili when they had time. You’re using your slow cooker right? If you’re not…we need to talk. 😉

Slow Cooker Chicken Chili

Serves: 6-8
 
Ingredients
  • 1 onion
  • 3-4 boneless skinless chicken breasts
  • 1 pkg taco seasoning
  • 1 can black beans
  • 1 can kidney beans
  • 1 large can diced tomatoes
  • 2 small cans tomato paste
  • 2 cups frozen corn
  • 1½ cups chicken broth
Instructions
  1. Chop onion and place in the bottom of your slow cooker
  2. Lay chicken breasts on top of the onion
  3. Sprinkle taco seasoning over chicken
  4. Drain and rinse beans, place in the slow cooker with the remaining ingredients
  5. Cover and cook on low for 8-10 hours
  6. Shred chicken with 2 forks
  7. Serve hot with sour cream, shredded cheese, avocado, or nacho chips

* I use a combination of black and kidney beans, but you can use 2 cans of your favorites

** You can lay your whole chicken breasts in the slow cooker or cube them.

There’s something so satisfying about having supper ready in the morning before you head out the door, and coming home to the delicious smell that now fills your house. When you barely have your coat off, and a teenager yells from their bedroom, “What’s for supper? I’m starving!” You can answer “Chicken Chili, and it’s all ready. Next time don’t yell at me from your bedroom…come out and talk to me like a civilized person!…..” Whoops….got a little off track there. You know what I’m saying. Supper is ready. Come and get it. 🙂

    Hi Jen! So excited to follow your recipes… they really appeal to me and the things we enjoy eating in our house. This one is just the thing for a busy Saturday!
    Quick question – if I’m going to freeze it in advance, I assume I leave out the broth and onion and add those to the slow cooker when I’m actually cooking it?

    • No….just dump everything in your slow cooker Erin….then cool and freeze. When you are ready to eat just thaw and reheat. Done! 😊
