Simple Roasted Sweet Potatoes

I love sweet potatoes. Sweet potato soup, sweet potato and black bean chili and sweet potato fries are all things that rank high on my favourite foods list. For quick and simple, go with almost anything, I love a nice dish of simple roasted sweet potatoes.

I think some of the best recipes are the ones that aren’t really a recipe at all. That is the case for these roasted sweet potatoes. Super simple and easy, not a lot of prep time, and you have a delicious, tasty, rustic side dish ready to go.

Roasted Sweet Potatoes

Serves: 4-6 servings
 
A perfect side dish to any main meal.
Ingredients
  • 2-3 medium sized sweet potatoes
  • 2-3 tbsp olive oil
  • ¾ tsp salt or sea salt
  • ¾ tsp black pepper
Instructions
  1. Leave peeling on, wash and dry the sweet potatoes
  2. Cut into 1 inch cubes
  3. Put into a bowl and toss with the olive oil and salt and pepper
  4. Spread out on a large baking sheet lined with parchment paper (optional)
  5. Bake at 400 degrees for 25-30 minutes turning/flipping them at the halfway point

These were so good, that I could have eaten them like candy out of a bowl. I may have actually done that…except off of the tray…some of them never actually made it into a pretty bowl. 😉 I made these last week before my son’s hockey game with some roast chicken with peppers and onions. Simple ingredients. Simple prep. All ready in less than the time it would take to have a pizza delivered.

    I use mashed sweet potatoes on the top of my shepherd’s pie – I like it much better than with regular mashed white potatoes. The girls prefer regular white potatoes though, so I usually do white on one end and sweet on the other.
