Shrimp and Feta Pasta Toss

Oh pasta….where would we be without you in our lives? NOWHERE…that’s where! It would be a cold, dark and dreary world without a nice bowl of warm pasta to warm us up. Can you feel the love here? Our family…and I think most that has teenagers…love this meal time staple, Shrimp and Feta Pasta Toss.

Shrimp and Feta Pasta Toss is on my family’s meal rotation list. Generally whenever shrimp is on sale I pick up a bag or two and make this recipe. It is quick and easy with really just a few basic ingredients. Typically the shrimp I buy needs to be peeled, but that only takes a few minutes, but you can buy the peeled bags and sometimes those are on sale as well. Feel free to use penne, fettuccine or linguine for this, but our preference is fettuccine.

Another recipe where “The Rock” Deep Fry Pan With Glass Lid, performs beautifully. This has been such a great addition to my kitchen. Cooks evenly and cleans like a dream. 🙂


Easy Shrimp and Feta Pasta

Quick and simple pasta that can be ready in under 30 minutes
Ingredients
  • ½ 450g box of penne or fettuccine
  • 4 garlic cloves, minced
  • 1½ onions, chopped
  • Olive oil
  • 28 oz can of diced tomatoes
  • 2 tsp oregano
  • ½ tsp black pepper
  • 400g bag of uncooked shrimp, peeled
  • 1½ cups crumbled feta
  • ¼ cup chopped fresh parsley or basil, or 2 tsp dried
Instructions
  1. Bring a large saucepan of water to a boil
  2. Add pasta and cook until al dente, about 8-10 min
  3. In a large, wide pan, heat about 2 tbsp olive oil over medium heat
  4. Add garlic and onions and stir until onions begin to soften, about 3 minutes
  5. Add tomatoes, oregano and pepper and over medium high heat stir often until liquid is reduced by half, about 6-8 minutes
  6. Add shrimp and continue to cook uncovered until shrimp are pink and firm, about 3-4 minutes
  7. Remove from heat
  8. When pasta is cooked, drain well and stir into sauce
  9. Gently stir in feta and pasta

Trying to get your kids cooking a bit more? This is a perfect meal that most tweens/teenagers could handle. Plus it makes them feel quite accomplished to say “Shrimp and Feta Pasta Toss is ready!” 🙂 I serve this with a salad, rolls, or toasted bagel. Enjoy!
