Meal Plan Monday

I posted my meal plan last week and it garnered a fair bit of attention and feedback. We all need to eat…three times a day…you need a plan, or I do at least. Welcome to Meal Plan Monday.

This weeks meal plan is from the Atlantic Superstore.

This week I am making:

Easiest Ever Spaghetti Sauce

Chicken and Grape Salad

Pork Chop Dinner ( slow cooker)

Here’s what I bought:

Penne Pasta- $1.88

Sliced almonds-$3.49

Cream of mushroom soup-$1.25

2 -28 oz Diced tomatoes- $2.50

Mozzerella cheese- $5.99

PC Yellow mini potatoes- $3.99

Garlic- $1.29

Onions- $2.00

Cucumbers- $5.99

Red seedless grapes- $4.57

Italian sausages- $7.98

Chicken Breasts- $10.31

Boneless Pork Chops- $5.23

Rolls- $2.79

* You can use any type of potatoes in this weeks recipe, but for a super quick slow cooker meal I have bought the bag of mini-potatoes.

** There will still be some of the ingredients left after making my meals….the cheese, grapes, cucumbers, onions, etc, that will be used for lunches and future meals.

What  I had at home:

2 5 1/2 oz cans of tomato paste

bay leaves

oregano, basil, thyme and sage

Renee’s Poppy Seed Dressing

carrots

liquid gravy browner

Two of this weeks meals feature the largest items on the front of the flyer, generally indicating the best deals. Chicken breast, pork chops and grapes are all bargains this week. I grabbed an extra pack of chicken breasts for the freezer and may pick up one or two more before the sale ends.

The Pork Chops, or roast is also a “stock-up” price. The large package of pork chops for only $5.23 is a steal! This is how you feed a large or small family on a budget. Look for the highlighted specials and plan your meals around those. There are different meats/fish/produce on sale each week….this is the backbone of your meal plan.

The Chicken & Grape Salad recipe is from Taste of Home. I’ve been making it for years, a lot in the summertime. We are having it tonight with rolls. I cooked my chicken breasts last night and will mix it up this morning. You can use any kind of poppy seed dressing, but Renee’s is the best for this. After a busy afternoon spent in meetings and watching volleyball, this will be all ready when we get home.  It’s Monday- we got this.
