Meal Plan Monday

Things are ramping up around here. I’m spending more time outside working in the garden and just enjoying the spring weather…so lovely! This also leads to me dreading to have to come in and get supper ready or scrambling at the last-minute. Then there are the activities. My daughter has had a busy sports schedule this spring with track and field and softball, and my son is just getting ready to start working his summer job which involves daytime or evening shifts. June is FULL with graduations, awards events, birthdays, Father’s Day, etc…I need to be organized. Back to Meal Plan Monday and the time a little Sunday meal plan prep. 🙂

Meal Plan Monday

I think I’m going to give Sunday meal prep a try for the next while. This time of year we eat a lot of fresh meals and while there may be the occasional freezer meal, we are usually making salads or grabbing fresh fruit vegetables at the farm markets each week, with some sort of fish, barbecue, etc. Plus, I think this could work well for my son who will be eating at odd times during most of the summer, due to his job.

This honestly just came together on Sunday.  I knew I wanted to roast 2 chickens, as Monday I will be at softball districts with my daughter….but then as I mapped out a meal plan for this week, I decided to just keep going and prep a few more things. I’m feeling good!

So I roasted 2 chickens Sunday afternoon, and also made a pot of rice and a pot of quinoa. After the 2nd chicken cooled, I took all the meat off and shredded/cubed it for the chicken fried rice. Now, when I get home on Monday it will only take a few minutes to pull supper together. I also had some ground beef ready to use, so I made up the patties and put them in the freezer. I will barbecue those on Tuesday and will have enough for leftovers the next day. With the quinoa already cooked, the salad will come together quickly as well. Thursday’s dinner is more a make-it-fresh type meal, but most likely I will make the English Muffin Mini Pizza’s at the same time, so Friday will be a no-cook day. 🙂

Just having these prep things done, and a plan in place is already making me feel like I have a good handle on this week. I think a little Sunday meal prep might be the key to summer meal planning for me this year. Sometimes I feel like we eat worse in the summer, because I struggle with cooking every day….but this might be the answer to easing my frustration…and also make sure we are not eating ice cream for supper.  🙂

    i cannot get the Quinoa salad to open,, I get a 404 error… anyone else? otherwise ,thanks for the recipes,, definitely going to try a couple of them!!
