Meal Plan Monday

Good news! We’ve reached the half way point of January! Wasn’t it just New Year’s Eve? Although I have to admit when people ask me how my Christmas was, I have to really stretch, and then I hesitantly answer “Good…?” Time is the hardest concept to comprehend. I’m still in that “New Year” mentality and can’t help myself from thinking ahead to the next 12 months and what events are on the horizon and how it will all look and feel at the time. One thing I do know, whatever event is on for that week or month…we still need to eat. 🙂 Welcome to Meal Plan Monday!

This week’s meal plan is a typical one for January. A soup, a slow cooker meal, a Meatless Monday, etc. There’s a hockey game, a weeknight meeting and some appointments on the calendar, so having my meal plan on the fridge is already giving me a peaceful feeling. Knowing I have all the ingredients and a plan for each night is empowering! Who knows what the next week will bring…but I do know what we’re having or supper. 🙂

This week’s meal plan is from The Atlantic Superstore.

Here’s what we’re having:

Ham and Cheese Frittata with Carrot Sticks

Chicken with Wine Stew (slow cooker) with Mashed Potatoes and Corn

Sirloin Roast with Potatoes and Carrots

Sweet Potato Soup with Lentils

Garlic and Herb Pork Tenderloin

Here’s what I bought:

1 Dozen Large Eggs- $1.99

Here’s what I had:

Olive Oil- Sweet Potato and Lentil Soup
Salt and Pepper- Sweet Potato and Lentil Soup
Onions- Sweet Potato and Lentil Soup
Rosemary- Sweet Potato and Lentil Soup
Oregano- Sweet Potato and Lentil Soup
Ginger- Sweet Potato and Lentil Soup
Cumin- Sweet Potato and Lentil Soup
Coriander- Sweet Potato and Lentil Soup
Turmeric- Sweet Potato and Lentil Soup
Cinnamon-Sweet Potato and Lentil Soup
Paprika- Sweet Potato and Lentil Soup
28oz Can Diced Tomatoes- Sweet Potato and Lentil Soup
4 strips of Bacon – Chicken with wine stew
1 1/2 C Chicken Stock- Chicken with wine stew
1/2 C White Wine= Chicken with wine stew
Bay Leaf- Chicken with wine stew
Italian herb seasoning or Mrs.Dash- Chicken with wine stew
Green Onions- Chicken with wine stew
1/4 C flour- Chicken with wine stew

The 10 lb bag of potatoes will do us for several meals. There is an extra pork tenderloin which will make the base for a future meal. The cost of those, then added with the few items I had at home like the diced tomatoes and bacon, pretty much balances everything out. So the total cost of this week’s meal plan is $62.03

A few notes about this weeks meal plan Monday!:

* When I make the Ham and Cheese Frittata, I just use whatever I have in the fridge. I bought green pepper and tomatoes, but will add any other peppers, spinach, etc, if I have it. Leave out the ham and you have a Meatless Monday meal. I often use 8 eggs and put it in an 11×7 square pan, then just slice it into squares and put it in a toasted sandwich. Yum!

* I linked to the Chicken with Wine Stew Recipe from Chatelaine. I have been making this for years. I bought bone-in chicken thighs that were on sale this week and took the skin off. I also don’t brown it ahead as the recipe calls for. I just put it right in my slow cooker with the chopped bacon and the rest of the ingredients and let it do its thing. It makes a nice gravy which is delicious over mashed potatoes.

* The Pork Tenderloin that’s on sale this week is a 2-pack which means you have enough for the Herb and Garlic Pork Tenderloin and another meal. I often will just slice it up and make a stir fry. I like to use a bag of baby potatoes for this meal, but you can also just use regular potatoes and cube them.

  1. I love the idea of cutting up the frittata and putting it in a sandwich. I’ll have to try that! I’m really hoping to get chickens again this spring and then I’ll definitely be making a lot of egg dishes.

    I’ve got a couple of Instant Pot recipes on my menu this week, plus a roast which I’ll likely do in the crockpot. I’m also hoping to bake some bread. http://lifewithdee.com/menu-monday-january-16-2017/
