Just like Mom Used to Make- English Muffin Mini Pizzas

I posted a photo on my Facebook earlier this month of some English Muffin Mini Pizzas I had prepared and so many people responded with nostalgic memories. Lots of comments  like…”these are just like my mom used to make!….”I used to love these…” I have to say that they regularly make appearance here and everyone loves them. They’re quick to prepare, easy to personalize and a perfect make ahead meal….what’s not to love about a recipe just like mom used to make- English Muffin Mini Pizzas. 🙂

I typically pick up whole wheat english muffins when these are on my meal plan. It makes it a bit healthier and the kids  never even notice. Slice them in half…toast them…and your base is ready.

I like to saute some diced vegetables for our english muffin mini pizzas…onions and green peppers are the most common combinations but I also love mushrooms on mine. This is where it’s easy to personalize and make your pizzas to everyone’s liking. Or better yet…have your english muffins toasted and loaded with pizza sauce and everyone could just make their own pizza!

 

You can add pepperoni or sliced deli meat…shredded mozzarella and season with oregano…fresh if you have it.

We often just pop ours in the microwave to melt the cheese and heat them up. You can also pop them in the oven for 10-12 minutes which will give you a nice baked mini-pizza.

With the sautéed vegetables, I actually really like these. A perfect lunch or we often have them for supper with a salad. Easy enough for the kids to handle and great to have made ahead and ready to pop in the oven at the end of the day. What’s not to love? 😉

Just like Mom Used to Make- English Muffin Mini Pizzas

A perfect lunch or easy to personalize supper
Ingredients
  • english muffins
  • pizza sauce
  • pepperoni or deli meat
  • diced onions
  • diced peppers
  • shredded mozzarella cheese
  • oregano
Instructions
  1. Slice english muffins in half and toast them
  2. Once toasted lay on a parchment paper lined baking sheet
  3. Spread pizza sauce over the bottom of the english muffins
  4. Top with pepperoni or sliced meat
  5. Saute onions and peppers
  6. Add sauteed vegetables to the top of the english muffin
  7. Top with shredded mozzarella cheese
  8. Sprinkle with oregano
  9. Bake at 350 for 10-12 minutes

    Thank you for this post, I don’t make these enough!!

    I made them for my two kids before we went trick or treating last night. I had never toasted the muffins or fried the veggies first before putting in the oven, what a difference those simple steps made – much more delicious!

    My toddler and baby gobbled them up and loved helping me make them.
