Haskap Jam-Haskap Strawberry Freezer Jam

Nothing says summer to me like jars of jam cooling on the counter. Then after they are set, enjoying that jam on a warm biscuit, toast, or in a classic PB&J sandwich. I love-making jam and my daughter mentioned the other day that she doesn’t remember ever eating jam from a store. The family favorite here is strawberry jam, but I was anxious to try a new variation of Haskap Jam!

After visiting the Haskap U-pick at South Shore Farms last week, I was excited to try my own haskap jam with the berries I brought home. South Shore Farms had some jam samples at their Open Farm Day and it was delicious.  The Haskap berry has nearly three times the number of antioxidants than a wild blueberry, making it an important part of a healthy and balanced diet. Haskap-Strawberry Freezer Jam seemed like a good choice for my first go with Haskap berries.

Haskap-Strawberry Freezer Jam
Prep time: 
Total time: 
Serves: 5 cups
 
Ingredients
  • 1½ cups crushed strawberries
  • 1 cup crushed haskap berries (2 Cups Haskap= 1 Cup crushed)
  • 4 cups sugar
  • 1pouch liquid pectin
  • 1 tbsp lemon juice
Instructions
  1. Mix crushed fruits and sugar and let sit for 10 minutes
  2. Add liquid pectin and lemon juice and stir for 3 minutes
  3. Pour into clean containers, filling up to ¼ inch from the rim
  4. Cover with lids
  5. Let sit at room temperature for 24 hours
  6. Refrigerate for up to 3 weeks or freeze for up to 8 months

 

Haskap jam has been a  big hit here! The Haskap and Strawberries combine into a beautiful deep color. A dish of this would look beautiful on a cheese plate. Haskap-Strawberry Freezer Jam is sweet with a slightly tart undertone from the Haskap .  We are supposed to review jam like a fine wine right? 😉

Part of my joy is making jam from berries we picked ourselves. I see lots of potential with both of these berries in season at the same time. I’ve also tried a Haskap-Strawberry Smoothie I’ll be sharing next. This all has me excited to get to South Shore Farms U-Pick again and get some more Haskap berries to put in my freezer. I am looking forward to enjoying the health benefits of this “superfood” all year.
