Ham and Cheese Frittata

This recipe is in constant rotation in my house. In fact, I don’t even consider it a recipe anymore. It couldn’t be easier and a great way to use up whatever ingredients you have in the fridge. I make this a lot on Sunday mornings, but works perfectly for a weeknight meal, or meatless Monday if you want to leave the ham out. Eggs are such a great source of protein, throw in some ham and cheese and veggies and this is a quick weeknight option to feel good about. We often toast some bread or bagels and throw it in a sandwich. If you are using this weeks meal plan, make a caesar salad on the side. So many options!

This recipe originally came from Chatelaine. I still have the torn out, tattered, magazine sheet in my cookbook binder. 🙂

This delicious frittata combines cheese, ham and diced veggies for a hot dish that can be eaten for breakfast, lunch or dinner.
