Roasted Sweet Potatoes

Serves: 4-6 servings
- 2-3 medium sized sweet potatoes
- 2-3 tbsp olive oil
- ¾ tsp salt or sea salt
- ¾ tsp black pepper
- Leave peeling on, wash and dry the sweet potatoes
- Cut into 1 inch cubes
- Put into a bowl and toss with the olive oil and salt and pepper
- Spread out on a large baking sheet lined with parchment paper (optional)
- Bake at 400 degrees for 25-30 minutes turning/flipping them at the halfway point
