Barbecued Chicken- Tastes like Summer

Summer to me means barbecue. I enjoy cooking outside while the sun is shining and the birds are singing, not to mention the lack of dishes to wash! I love just about anything barbecued from burgers and hot dogs, to roasted veggies and potatoes, but my absolute favourite; barbecued chicken – tastes like summer to me.

I have mentioned before that my birthday is in July and when I was growing up I got to pick my birthday dinner, and each year I asked for barbecued chicken and potato salad. It’s still one of my favourite meals to eat in the summer! Barbecuing chicken takes time, but the effort is definitely worth it.

Barbecued Chicken

Serves: 4-6
 
Ingredients
  • 4 lbs Chicken parts- leg, wing, breast, thigh, skin-on.
  • Salt
  • Vegetable Oil
  • Barbecue Sauce
Instructions
  1. Brush the chicken pieces with vegetable oil
  2. Sprinkle salt over them
  3. Warm up barbecue until it reaches a temperature of 350 degrees
  4. Shut burners off on one side
  5. Place chicken pieces on hot side for 5-10 minutes until you get a good sear on one side
  6. Once you have a good sear, move the chicken to the cool side of the grill. not directly over the flame
  7. Try to keep the temperature around 300 degrees , cover and cook undisturbed for 20-30 minutes
  8. Turn chicken over and slather with barbecue sauce
  9. Cover and cook for another 10-30 minutes (timing depends on the size of your chicken pieces)
  10. Finish with a sear on the other side if you like
  11. When you insert the tip of a knife into the middle of the thickest piece and the juices should run clear, the chicken is done
  12. Spread more barbecue sauce on before taking off the grill

*If you worry about making sure the chicken is done, you can also pick up a meat thermometer and check it that way.

Grill some up and have them ready in the fridge for those hungry teenagers, or invite some friends over and have some drinks on the patio while you’re barbecuing. Summer is when things are meant to slow down. Taking the time to barbecue something right…is never wrong. 🙂
